Dry Ingredients

  • 1.5 cups quick oats
  • 1.5 cups old fashioned oats
  • 1/4 cup pumpkin seeds
  • 1/2 cup unsweetened coconut flakes/chips
  • 1/4 cup hemp hearts
  • Cinnamon to taste (be generous here)
  • 1/2-1 teaspoons sea salt
  • 1 Granny Smith apple chopped coated in cinnamon

Wet Ingredients

  • 1.5 cans organic pumpkin
  • 1 scoop unflavored or vanilla protein (optional)
  • 2 egg whites
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat oven to 425.
  2. Mix together dry ingredients.
  3. Whisk wet ingredients together until smooth.
  4. Mix wet and dry ingredients together, stir or mix with hands.
  5. Then, fold in blueberries.
  6. Pour onto a parchment lined baking sheet, use a rubber spatula to fill to edges and smooth out.
  7. Sprinkle with cinnamon and sea salt and bake for 30 mins.
  8. Cool, cut into squares, and enjoy!

  • Top with almond, cashew butter (or other nut butter), sliced banana, granola, and more fresh blueberries!
