Ingredients

  • 1 Sweet Potato
  • 1lb. Brussels Sprouts
  • 2 Yellow Bell Peppers, ribs and seeds removed
  • 1 Red Onion
  • Extra Virgin Olive Oil
  • Kosher Salt
  • Black Pepper
  • Garlic Salt
  • Italian Seasoning
  • 1/2lb. Italian Sausage, casings removed

For Garnish

  • Goat Cheese Crumbles
  • Italian Parsley

Instructions

  1. Preheat oven to 400. Chop vegetables into 1-2″ pieces and place on a baking sheet. Toss with olive oil, salt, pepper, and Italian seasoning, then spread out in an even layer and roast for 30 minutes. Toss halfway through cooking.
  2. Meanwhile, sauté Italian Sausage in a skillet over medium-high heat until almost cooked through. Use the back of a wooden spoon to break up into chunks.
  3. Remove the baking sheet from the oven, sprinkle Italian Sausage over the top, place back in the oven for 10 minutes, or until Sausage is fully cooked and crispy.
  4. Remove pan from oven and top with Italian Parsley and Goat Cheese Crumbles. Serve immediately!

  • Top with almond, cashew butter (or other nut butter), sliced banana, granola, and more fresh blueberries!
