Ingredients

  • 7 Ounces Organic Kale
  • 1/2 Large Head Cauliflower
  • 1 Cup Walnuts
  • 1/2 Cup Finely Grated Parmesan Cheese
  • 1 Lemon
  • 1/2 Cup Raisins

Instructions

  1. Roast walnuts in a 300℉ oven for 15-20 minutes or until golden brown. Roughly chop and set aside.
  2. Grate cauliflower into rice-size pieces (or just use a bag of riced cauliflower). Wash/dry kale leaves and strip from stalks.
  3. Finely chop kale and add to bowl with cauliflower. Add cheese, most of the walnuts, a pinch of salt, some freshly ground black pepper, 3 1/2 Tbsp extra virgin olive oil, zest of half the lemon, and juice of the lemon. Add raisins if using them.
  4. Mix well and check for seasoning. Serve and enjoy!

Notes

  • Play with your salad toppings! Try air-fried chicken breast, pickled onions, chopped steamed beets, etc. The possibilities are endless.
    Not a fan of raisins? Sub chopped dates for a hint of sweetness.
