Ingredients
- 1/2 Cup Red Wine Vinegar
- 1/4tsp Salt
- 1/4tsp Black Pepper
- 1/4 Cup Extra Virgin Olive Oil
- 5 Cups Seedless Watermelon, Cubed
- 1 English Cucumber, Chopped
- 6 Ounces Feta Cheese, cut into 3/4″ cubes
- 1/2 Cup Red Onion, Thinly Sliced
- 2Tbsp Fresh Mint, Chopped
Instructions
- Whisk vinegar, salt + pepper in a small bowl; gradually whisk in oil until completely incorporated.
- Combine watermelon, cucumber, feta + onion in a large bowl. Gently stir in 1/2 cup of the vinaigrette. Refrigerate for at least 20 minutes or up to 2 hours.
- Just before serving, gently stir in mint. Drizzle with remaining vinaigrette.
