
Ingredients:
- 3 poblano peppers, diced
- 1 jalapeño diced
- 1 medium white onion diced
- 3 cloves garlic, diced
- 3 lbs ground beef, bison or turkey
- 3-4 tbsp Lanes BBQ fiesta seasoning
- 1 cup salsa (I used Jack’s, b/c there are no preservatives)
- 1 bag riced cauliflower
- 1 bag shredded coleslaw mix
Optional Ingredients/Toppings:
Pickled red onion, salsa, Greek yogurt or sour cream, avocado, lime
Directions:
Brown the ground beef for 5 minutes on medium-high. Add peppers, onions and cook for 2-3 minutes stir to combine and allow the peppers to cook to desired consistency. Add garlic and Fiesta seasoning, stir to combine. Add riced cauliflower and slaw mix, cook 2-3 mins. Stir in the salsa. And serve hot. Serves 8-10.
We have served this over rice, quinoa, and/or lettuce and top with the toppings above. Our kids eat it in a tortilla and top with cheese, salsa and sour cream. It’s truly a family favorite at our house. We make it as the main dinner then plan to eat it during the week for meal prep.
