Dry Ingredients
- 1.5 cups quick oats
- 1.5 cups old fashioned oats
- 1/4 cup pumpkin seeds
- 1/2 cup unsweetened coconut flakes/chips
- 1/4 cup hemp hearts
- Cinnamon to taste (be generous here)
- 1/2-1 teaspoons sea salt
- 1 Granny Smith apple chopped coated in cinnamon
Wet Ingredients
- 1.5 cans organic pumpkin
- 1 scoop unflavored or vanilla protein (optional)
- 2 egg whites
- 1/2 cup fresh blueberries
Instructions
- Preheat oven to 425.
- Mix together dry ingredients.
- Whisk wet ingredients together until smooth.
- Mix wet and dry ingredients together, stir or mix with hands.
- Then, fold in blueberries.
- Pour onto a parchment lined baking sheet, use a rubber spatula to fill to edges and smooth out.
- Sprinkle with cinnamon and sea salt and bake for 30 mins.
- Cool, cut into squares, and enjoy!

- Top with almond, cashew butter (or other nut butter), sliced banana, granola, and more fresh blueberries!
