Ingredients

  • 3 cups broccoli, chopped
  • 1 Honey crisp apple, diced
  • 1 tsp lemon juice
  • 1 tbsp celery, chopped finely
  • 1/2 shallot, diced
  • 1/4 cup pumpkin seeds

Dressing

  • 1/3 cup apple cider vinegar
  • 2 tbsp mayonaise
  • 1 tsp dijon mustard
  • 1 tsp maple syrup
  • 1/2 shallot, diced
  • 1/2 tsp fresh garlic, chopped
  • salt and pepper to taste

Directions

  1. Mix up dressing and set aside
  2. Add the lemon juice to the apple in a large bowl
  3. Add broccoli, shallots, and dressing
  4. Top with pumpkin seeds
  5. Enjoy!
