Ingredients
- 3 cups broccoli, chopped
- 1 Honey crisp apple, diced
- 1 tsp lemon juice
- 1 tbsp celery, chopped finely
- 1/2 shallot, diced
- 1/4 cup pumpkin seeds
Dressing
- 1/3 cup apple cider vinegar
- 2 tbsp mayonaise
- 1 tsp dijon mustard
- 1 tsp maple syrup
- 1/2 shallot, diced
- 1/2 tsp fresh garlic, chopped
- salt and pepper to taste
Directions
- Mix up dressing and set aside
- Add the lemon juice to the apple in a large bowl
- Add broccoli, shallots, and dressing
- Top with pumpkin seeds
- Enjoy!
