
Ingredients:
- 8-10 cups arugula or other mixed greens
- 1-2 fresh peaches, sliced
- ¾ cup fresh blueberries
- ¼ shallot OR red onion, thinly sliced diced (optional)
- 4 ounces goat cheese, cut into chunks
- 1/4 cup toasted pecans
- 1/4 cup Honey Balsamic Dressing (see below)
Directions:
- In a large bowl, combine the greens, peaches, blueberries, shallots, goat cheese, and pecans. Gently toss ingredients together.
- Drizzle then toss the salad with balsamic vinaigrette.
- Serve immediately. Add your favorite protein or a slice of sourdough – yum!
Honey Balsamic Dressing
Ingredients:
- ½ Cup Balsamic Vinegar
- 1 teaspoon Dijon Mustard
- 1 teaspoon honey
- ¼ Cup Olive Oil
- Salt and Pepper to taste
Directions:
Whisk together and store in a sealed jar. Shake vigorously before serving.
