Ingredients

  • 1/2 Cup Red Wine Vinegar
  • 1/4tsp Salt
  • 1/4tsp Black Pepper
  • 1/4 Cup Extra Virgin Olive Oil
  • 5 Cups Seedless Watermelon, Cubed
  • 1 English Cucumber, Chopped
  • 6 Ounces Feta Cheese, cut into 3/4″ cubes
  • 1/2 Cup Red Onion, Thinly Sliced
  • 2Tbsp Fresh Mint, Chopped

Instructions

  1. Whisk vinegar, salt + pepper in a small bowl; gradually whisk in oil until completely incorporated.
  2. Combine watermelon, cucumber, feta + onion in a large bowl. Gently stir in 1/2 cup of the vinaigrette. Refrigerate for at least 20 minutes or up to 2 hours.
  3. Just before serving, gently stir in mint. Drizzle with remaining vinaigrette.
